爆漿魚丸

相傳秦統一六國後,秦始皇稱帝,他不僅要求吃得好,而且忌諱還特別多。根據稗史的紀載,秦始皇好吃魚,他統一全國做了皇帝後,每餐必要有魚,但又不能有刺,如有魚刺則賜廚師死,有好幾個廚師為此喪命。

有一天,某廚師製作御膳,見到魚又膽怯又發狠,就用菜刀背砸魚發洩。一下兩下,砸著砸著,他驚奇的發現,魚刺魚骨竟自動露了出來,魚肉成了魚茸。正在這時,宮中傳膳了,廚師急中生智,揀出魚刺,順手將魚茸捏成丸子,不假思索就投入已燃沸的湯中。

不一會兒,一個個色澤潔白,柔軟晶瑩,嘗之鮮嫩的魚丸浮於湯面上,並呈到了秦始皇面前。可魚丸的「丸」字與完了的「完」字諧音不吉利,所以廚師提心吊膽。誰知討好皇帝的內侍給魚丸起了個雅號「皇統無疆風味」,始皇帝非但吃得高興,而且還傳旨嘉獎廚師。
丸的做法傳到民間後,老百姓可不管忌諱不忌諱,仍叫它「魚丸」或「魚圓」。至今台灣省還是常以海魚、蝦仁、澱粉為原料精制成魚丸。後人更是將原本的魚丸演變出其他的口味。

Fish Ball with Juicy Fish Roe

After the State of Qin merged all other States, Qin Shi Huang claimed himself Emperor. He requested food of high quality and had many taboos. After becoming the Emperor, he asked for fish to be served with his every meal. But he had no tolerance on fish bones. If he found any fish bones, the cook will be sentenced to death. Several cooks died as a result.

One day, a cook was charged with the duty of cooking for the Emperor. When he saw the fish, he was scared. He let go of his hatred and horror by hammering the fish with the back of his knife. To his astonishment, he found that the bones came out automatically from the minced fish. At that moment, the Emperor requested his meal to be served. In haste, the cook picked out the fish bones, made the minced fish into balls and dropped them in boiled water.

After a short while, fish balls were floating in the soup, white, soft and tender. The fish balls were then brought to the Emperor. The cook was worrying about their name. In Chinese, "ball" sounds similar to "annihilate", thus had an indication of bad fortune. But the eunuch named them "boundless majesty" in order to please the Emperor. Qin Shi Huang was deeply pleased with the fish balls and even gave an order to reward the cook.

The making of fish balls was later learned by ordinary folks. They did not care about the taboos and simply call this type of food "fish ball". Nowadays people in Taiwan use fish, shrimp and farina to make fish balls, and people are also making improvements so the fish balls now have more flavours.

狀元魚丸

台南地區稱虱目魚為麻虱目、安平魚、國姓魚或狀元魚,傳說明朝鄭成功抵達台灣省登陸鹿耳門之時,漁民為了歡迎他們而獻上此魚,而鄭成功問道此魚是「什麼魚」,後人認為鄭成功賜此魚名為「什麼魚」,而就以福建話諧音稱其為虱目魚。

另外也有傳說鄭成功登陸台灣之時,士兵們苦無鮮魚可食,國姓爺指海而示之曰:「莫說無,此間舉網可得也。」下網果然得魚,故稱之為「國姓魚」或「莫說無」,而「莫說無」諧音為「麻虱目」,其音就很類似現在的虱目魚。

虱目魚丸口感緊實有彈性,新鮮彈牙的絕佳口感,不僅大塊魚肉能讓您吃得到真材實料,而且虱目魚所富含的EPA及DHA等高營養價值,更可降低膽固醇、預防血酸、提高腦部資質等提供許多對人體有益無害的養身保健功效,因此在清朝時的台灣,每當孩子要考試時,家家戶戶都會煮個狀元魚丸,希望孩子考個狀元回來。

Milkfish Ball

Milkfish, also known as shimu in Southern Taiwan, was the fish that the fishermen in Southern Taiwan offered to Zheng Chenggong to congratulate him on his victories. Zheng Chenggong asked the fishermen what the fish was, but the fishermen thought he was naming the fish. As a result, they started to call the fish "shimu".

Another legend stated that when Zheng Chenggong landed in Taiwan, there was no fresh fish for the soldiers. Zheng Chenggong said:“Don't say no. Just try with a fishing net.” Within a short period of time, the fishermen caught plenty of fresh fish. As a result, they name the fish "don't-say-no". Since "don't-say-no" sounds similar to "shimu", people later called the fish "shimu".

Milkfish balls are firm and bouncy. Its made with real fish and is highly nutritious. Milkfish is rich in EPA and DHA and can lower the level of cholesterol and hematic acid. It can also provide many benefits to brain and human body. Therefore, in Qing Dynasty, when it is time for the national test, people will cook milkfish balls, hoping that examinees will achieve good outcomes.

花枝魚燕

談到花枝丸的由來,可追溯至1974年。台灣省澎湖島的烏賊、花枝等漁產滋味鮮美,產量豐沛,但價格及銷售情況卻不甚理想,故亟思妥善解決之道。

因此,台灣漁業協會構思如何改變傳統海產的銷售及食用方式,以避免造成暴殄天物的困境與無奈;並考慮似可做成類似魚丸的產品,賦予嶄新的風味與食用習慣,同時藉以提升烏賊類漁產品(花枝)的附加價值與整體銷售業績。

討論出大概的變革方向後,相關人員全心全意地投入新產品之研發工作,歷經無數次實作、試吃及改良之後,終於成功開發出嶄新的花枝加工食品;除取其原料及外型將之正式定名為花枝丸和現在最新的產品 "花枝魚燕" ,並率先在亞洲市場試賣及推廣。

Fried Fish and Squid Pancake

The origin of cuttlefish balls can be dated back to 1974. The octopus and cuttlefish of Pescadores Islands are very tasty. However, the prices of octopus and cuttlefish were very low and not many people liked to buy them. The fisherman wanted to find out a way to change this situation.

As a result, the Fishing Association of Taiwan tried to find out a strategy and they thought that they could create a product similar to fishballs. With the help of this new product, the sales of cuttlefish would be promoted.

Many efforts were made to develop the new product. After several trials, improvements were made and a brand new product was eventually created.Cuttlefish balls will first be available in Asian Markets

蝦丸

Shrimp Ball

The modern medicine pointed out that the shrimp is high nutritious. It can enhance the immune system and sexual function. Shrimp also has effects in anti-aging. Eating fresh shrimp on a regular basis with warm wine can treat erectile dysfunction, sore legs and fatigue. If women cannot produce enough milk after giving birth to a child, they can eat 500 grams of fresh shrimp everyday with yellow wine. Dried shrimps have sedative effects and can be used in treating neurasthenia and autonomic nerve disorders. Shrimp can also provide nutrition to brain. 爆漿起士丸

起司,或英文Cheese,或乳酪。是一種起源於史前的古老食物,起司的起源始終是有爭議的,目前考古學家估計是在大約西元前八千年(當人類開始馴養山羊)到西元前三千年。相對確鑿的發現,是西亞的土耳其游牧部落或是中東的某個民族發明了起司,同時也發明了優酪乳。一種普遍傳言是一個阿拉伯游牧民族在穿越沙漠的時候,在駱駝背上馱著用動物胃囊盛裝的牛奶,發現牛奶因受牛犢胃內膜的影響分離成乳清和凝結物。

其他民間流傳,起司起初是一種通過擠壓和鹽化來保存發酵和凝結的奶液的方法,後來才演變成使用牛犢胃內膜,也許是有人在注意到乳酪放在動物胃囊內生產出更加穩定和更好的紋理組織。最早的考古發現起司的製造是在埃及人墓穴的壁畫上面,大約是在西元前兩千三百年,最早的起司可能會非常酸,非常鹹的,像易碎的希臘鄉村乳酪Cottage Cheese或者菲達乳酪Feta Cheese。

Fish Ball with Juicy Cheese

Cheese is the name for a kind of ancient food. Its origin remains controversial. The archaeologist claimed the people invented cheese between 8000 BC (when people began to domesticate goats) and 3000 BC. Further findings indicate that a tribe in Mid East invented cheese, and also yoghurt. A popular story is that when an Arabic tribe was trying to go across a desert, they store milk inside waterskins made with animal stomach. They found that due to the influences of stomach endomembrane, the milk began to form clots.

Other stories in dictated that cheese initially came from a method of preserving milk through salification, and later, people gradually started to use stomach endomembrane to make cheese. The earliest evidenceof documenting the making of cheese was found in the paintings inside ancient Egyptian tombs. The earliest cheese might have a very sour and salty taste. like the Cottage Cheese from Greece and the Feta Cheese. The methods of making cheese was later introduced to the Europeans. Since Europe is colder then Mid East, less salt was used when making cheese. Cheese made in different environments and climate can have different tastes. As a kind of food which is highly effective in fighting hunger, cheese is very convenient for travellers. It can be stored for a long time, is rich in fat, protein, calcium and many other nutritions.

爆漿蝦丸

傳統的台灣省蝦丸作法是選新鮮的蝦,取蝦肉的部分,然後在低溫狀態下絞成蝦絞肉,把絞肉和鹽加入木研鉢裡,將蝦絞肉用力捶打,蝦肉裡的鹽溶性蛋白會重組成網狀結構,最後變成綿細而有光澤的蝦漿。再將蝦漿用湯匙挖成球狀,下沸水中即可煮成台灣蝦丸。

經過兩岸不斷交流,以福州名點 "清朝初年的福州魚丸"為概念,創造出爆將蝦丸。魚肉多來自台灣的淡水魚,剁成茸狀後加薯粉攪拌均勻,再以台灣白蝦作餡製成球形丸子。爆漿蝦丸以其包心有蝦餡為特色,與傳統的福州魚丸各具風味。

Fish Ball with Juicy Shrimp

Traditional Taiwanese shrimp balls are made of fresh shrimps. The shrimps are chopped into mince under cold temperature. The mince are thumped repeatedly and made into balls.

Due to the continuous communication between Taiwan and the Mainland China, juicy shrimp balls were created based on the "Fuzhou Fish Balls in Qing Dynasty". Taiwanese freshwater fish are used with shrimp in making juicy shrimp balls. These balls have the taste of Fuzhou fish balls, but with shrimp fillings.

香菇魚丸

香菇是食用菌中的上品,素有“蘑菇皇后”之稱。它含有30多種酶和18種氨基酸,人體所需的8種氨基酸,香菇中含有7種。每100克幹香菇中含有蛋白質13克,還含有其它各種營養成分。“長壽菜”又名“燒香菇”,原是明代宫廷名菜,後流傳於民間。

相傳明代建都金陵(今南京)時,正遇天下大旱,災情嚴重。明太祖朱元璋祈神求雨,帶頭吃素數月,胃口不佳。這時軍師劉伯溫正好從浙江龍泉縣回到南京城,特地將從他家鄉帶來的著名特產香菇,浸泡以後加調味製成一道“燒香菇”的美味菜餚給朱元璋品嘗,朱元璋未及下筷,就聞到一陣陣香味,吃後感到此菜香味濃郁,軟熟適口,滋味異常鮮美,連連稱讚它是一道少見的好菜。隨即他又問劉伯溫 : "此菜滋味為何這樣鮮美,此物生在何處 ?" 劉伯溫便向其講述了龍泉香菇的一段傳奇故事 : 傳說一位名叫香菇的姑娘,為躲避財主迫害逃至荒山,餓昏在地,醒來後吃了這裡生長的香菇,不僅是恢復了健康,後來還活到百歲以上。從此朱元璋在宮中經常食用此菜,而且還稱它“長壽菜”。

Fish Ball with Mushroom

Shiitake is called "the queen of mushrooms". It contains more than 30 types of enzyme and 18 types of amino acid. Among the 8 types of amino acid required by human body, shiitake has 7 types. Every 100 grams of dried shiitake contains 13 grams of protein and other nutritions. Grilled shiitake is a famous royal dish during Ming Dynasty, which was also called "Longevity Dish".

Stories said that when Ming Dynasty chose Nanjing as its capital, the entire nation was affected severe drought. In order to prayed to god for rain, the Emperor ZHU Yuanzhang ate only vegetables for months. As a result, he was not having a good appetite. At that time, counsellor LIU Bowen returned to the capital from his home town. He brought shiitake with him, which was a special product of his home town. He then made grilled shiitake for the Emperor. The Emperor found that shiitake is very delicious and asked for its origin. LIU Bowen told the Emperor that shiitake was named after a girl who tried to escape from the persecution of her lord. She hid in the mountains and was starving. In the mountains, she had only a kind of mushroom to fill her empty stomach. Miraculously, she restored her health and lived a hundred years. After heard the story, the Emperor often requested shiitake for his meal, and name it the “Longevity Dish”.

香菇翅

媽祖姓林,名默,又稱默娘,出生於宋太祖建隆元年(或曰五代末年)福建路莆田縣湄洲島東螺村(宋太宗年間曾改為興化軍),一出生則不哭不鬧,因而取名為默,小名默娘。學者研究指出,媽祖是從中國閩越地區的巫覡信仰演化而來,在發展過程中吸收了其他民間信仰(千里眼順風耳)。隨著影響力的擴大,又納入儒家、佛教和道教的因素,最後逐漸從諸多海神中脫穎而出,成為閩台海洋文化及東亞海洋文化的重要元素。

媽祖信仰是臺灣最普遍的民間信仰之一。由明清時代漢人移民至中國東南沿海地區渡臺海而來,臺灣海上活動頻繁歷經台灣荷西時期的東亞貿易活動及明鄭王朝的武裝海商集團,因此媽祖成為臺灣人最普遍信仰的神明之一。無論是大小街莊、山海聚落,還是通都大邑,都可看到媽祖廟。僅臺灣省一地,「就有媽祖廟510座,其中有廟史可考者39座,內建於明代的2座,建於清代37座」。

台灣省漁民非常相信媽祖。漁民們相信每當封舟遇暴,只要向媽祖祈禱,風暴便突然停止;有時封舟即將沖礁撞毀,舟中之人向媽祖祈禱,封舟便奇蹟般地繞過島嶼。

Fish Pancake with Mushroom and Vegetable

The family name of Mazu is Lin and her first name is Mo. Therefore she was also called Lady Mo. She was born in Song Dynasty in Dongluo Village of Meizhou Island. She did not cry when she was born, therefore was named Mo. Studies indicated that the worship of Mazu is originated from the belief of Wuxi and merged with other folk religions. After becoming an influential religion, it further incorporated concepts from Confucianism, Buddhism and Taoism. Finally, Mazu becomes an important cultural element of Fujian, Taiwan and East Asia.

Mazu is the most popular belief in Taiwan. Brought to Taiwan by the migrants from the Mainland China during Ming and Qing Dynasty. Since then, Taiwan had gone through the boom of maritime trade. As a result, Mazu became the most worshiped god in Taiwan. Mazu Temples can be spotted everywhere. Record stated that in Taiwan, there are 510 Mazu Temples, 2 were built in Ming Dynasty and 37 were built in Qing Dynasty.

The fishermen of Taiwan worshiped Mazu with utmost piety. They believe that even storms can become quiet when they pray to Mazu, and Mazu can also save their ships from sinking.
